Spicing things up!

Since it's been awhile since I posted a recipe, I thought I'd stop holding out on y'all and let you have it! This one I made the other night and we LOVED it (or at least I did)! It's SUPER easy and only requires 4, yes 4 ingredients! Doesn't get much better than that! I'm not much of a pork chop eater, or at least I haven't been until now but WOWZA! 


 Simply place your pork chops in the crockpot (they can even be frozen-just know that they'll need to cook awhile longer), add 1 packet of ranch dressing, 1 can of cream of chicken and 1 cup of water and cook on low 4-6 hours! I put my pork chops in frozen and only cooked them for about 4 hours because it was kinda last minute and we were in a time crunch so next time I'll be sure to cook them longer but they were still DELISH! They also made a little gravy that I put over it so it wasn't too dry!

Caramelized Honey Dijon Chicken!

The title sounds delicious, right?! RIGHT! I found the recipe online (I thought it was Pinterest and then I couldn't find it again, so I'm not really sure) but anyways, I decided to give it a try. I'm usually one that loves to follow the rules/instructions but tonight...I figured I'd get a little crazy and try a few things different than what the recipe called for.

Here's what the recipe called for: (makes 4 chicken breasts)
4 boneless, skinless chicken breasts
2 tbsp olive oil
1/4 c. honey
1/4 c. dijon mustard
1-2 tbsp spicy mustard
salt & pepper

I used (only because I was trying it out and didn't want to ruin 4 pieces of chicken):


1 chicken cutlet (yeah, bummer...I accidentally bought cutlets instead of breasts)
2 tbsp olive oil
1/4 c. honey
1/4 c. honey dijon mustard
2 tbsp regular mustard mixed with cayenne pepper (as I didn't have any spicy mustard)
S&P

Heat the skillet on medium high and add Olive Oil. Pat the chicken dry with a paper towel so its very, very dry. Season w/ S&P generously, add chicken to skillet and brown on both sides (I did about 5 min on each side as mine was pretty thin).


In a bowl, combine the honey and both mustards. (I mixed the cayenne pepper reg mustard separately) and then added it to the honey and other mustard). Whisk well.

Remove chicken and while its still hot, brush on the mustard.


I'm tellin' ya it was slap yo mama good!!! And I realize it doesn't look very presentation worthy (more like squash baby food) but it is DELICIOUS!! Can't wait to have it again!

Megan's Chicken Creation!

Kinda. I actually saw the recipe on Pinterest (go figure), but substituted some things so that's why I call it "Megan's Chicken Creation!" The picture I saw on Pinterest didn't match the recipe below (which is what I used). I didn't realize until later that the picture I thought mine was going to look like was actually a picture of a different meal. It was SERIOUSLY delicious!! Jared and I are both picky eaters but it was by far one of the best meals we've eaten at home (and that I've cooked)! The recipe on Pinterest calls for: 


4 boneless chicken breasts
8 oz. softened cream cheese
2 cans of Cream of Chicken
1 packet of italian seasoning
Put it all the in crockpot, cook on low for 4 hours, and serve over pasta!

I did:
4 boneless chicken breasts
6 oz. cream cheese (not softened-b/c I didn't know what that meant...I'm telling you, I'm a beginner!!!)
1 can of Cream of Chicken
1 can of Cream of Mushroom
1 packet of italian seasoning
Put it in the crockpot on low for 5 hours, cooked the pasta separately but then dumped it in the crockpot so it would soak up all the flavor! 


Don't worry...I didn't eat all of that in 1 sitting...that actually fed me for dinner, plus lunch twice this week! 
I will probably use 2 cans of Cream of Chicken next time only because I'm not a huge mushroom fan, but either way, it was DELICIOUS!!!!

Better late than never!

As most of you know, I don't cook and there are a few reasons for why I don't cook much (ok, ever). The first is, I get distracted. I don't know how many times a friend has called and I've walked away from the stove or a show has come on that I've gotten wrapped up in. But the main reason is because I've always been a rule follower. I need step by step, specific instructions and because I've never really cooked, I don't know a lot of "common sense" things about cooking...i.e. substitutions, what specific terms mean, etc! But...its time for me to set aside the excuses and start cooking. I figured I'd start with an easy, slow cooker meal (seen below). It sounds super easy, as long as I measure everything correctly and don't turn the crockpot off halfway through it cooking like I did last time. Here's to my start at cooking (and hopefully my not giving up at cooking)! Wish me luck!

Kitchen Conversions!

As most of you know when it comes to me and cooking...we're like fire and water (literally...I create fire when cooking)...well, not yet but I have been known to produce tons of smoke in the kitchen a time or two ten! One of my main problems (in addition to getting distracted and walking away from what's cooking), is that I don't measure correctly. I'm HORRIBLE with conversions, SO I thought this might be a cute way to display the kitchen conversions! And it was FREE which is the best part!

All you need is a frame, some scrap fabric, and a 3 x 5 card!
I copied the conversions off a site online....
And there you have it! Its nice, decorative, and the 3 x 5 doesn't get sauce splattered on it. PLUS, its a nice little reminder!
